The Union Square Cafe’s Bar Nuts

Keep these on hand for drinks parties and everyday nibbling.

2 1/4 cups mixed raw nuts
2 tbs. coarsely chopped fresh rosemary
1/2 tsp. cayenne pepper
2 tsp. dark brown sugar
2 tsp. Maldon or other sea salt
1 tbs. butter, melted

Heat the oven to 350°F and spread the nuts in a single layer on a baking sheet. Roast for about 10 minutes, or until golden brown.

Transfer to a bowl and toss with the remaining ingredients. Serve warm or keep in an airtight container.

  1. These are addictive! Everyone loves them. I have used different combinations of nuts and they all work. Surprisingly they are yummy with pecans. I say that because that is the one but I am less fond of.
    I use maple syrup instead of the brown sugar and it works the same. Love them.
